If you have just collected fresh eggs from your own chickens or purchased farm-fresh eggs, here are some tips for properly storing them:

  1. Collect eggs frequently: Collect eggs at least once a day and preferably twice a day during hot weather to ensure that they are as fresh as possible.

  2. Check eggs for cleanliness and cracks: Before storing, inspect each egg for cleanliness and cracks. Discard any eggs that are dirty or cracked as they can harbor bacteria.

  3. Store eggs unwashed: Do not wash fresh eggs before storing them as washing removes the protective cuticle on the eggshell, which can increase the risk of contamination. If necessary, gently wipe off any visible dirt or debris with a dry cloth.

  4. Store eggs in a cool place: Fresh eggs should be stored in a cool, dry, and well-ventilated place, away from direct sunlight and strong odors. A cool room or pantry with a temperature between 45-55°F (7-13°C) is ideal.

  5. Store eggs with the pointy end down: Store eggs with the pointy end facing downwards. This helps to keep the yolk centered and prevents the air pocket from expanding too much, which can cause the egg to spoil more quickly.

By following these tips, you can help ensure that your fresh-laid eggs stay fresh and safe for consumption. Keep in mind that fresh eggs can be stored for up to one month in ideal conditions, but they are best consumed within two weeks of being laid.
